Maple Waffle Breakfast Casserole


You know when the family requests waffles and it means you’re going to have to stand over (at best, the toaster, at worst,) the waffle maker as you count down the minutes until each waffle is cooked to perfection? By the time you sit down to eat you know everyone’s going to be finished with their waffles already and you think, “there has to be a better way to do this….” And there is!




This is a two-for-one amazing meal; not only do you get to enjoy breakfast or brunch (or dinner, what the heck!) with and at the same as your family, but we’re also bulking it up and turning into a full meal that will fill everyone up. We love waffles just as much as the next person, but we wouldn’t say they’re the most filling breakfast item when served on their own. Which is why we added maple sausage into the mix, as well as plenty of eggs and cheese.




You guys, the combo is so, so good. The perfect blend of salty and sweet, with the sausage and the maple syrup, the waffles and the eggs. This is sort of like a strata – what with the toasted waffles taking on the flavors of the other ingredients – and we are absolutely here for it. It tastes amazing and makes for a well-rounded meal that has a little something in it for everyone.


Maple Waffle Casserole

40 minutes to prepare serves 6-8

Ingredients

  • 1 pound ground maple breakfast sausage
  • 8 toaster waffles, lightly and roughly chopped
  • 1 cup sharp cheddar cheese, grated
  • 8 eggs
  • 1 cup whole milk
  • 1 tablespoon dry mustard powder
  • 1/2 cup pure maple syrup
  • kosher salt and freshly ground pepper

Preparation

  1. Preheat oven to 375ยบ F and lightly grease 9x13-inch baking dish with butter or non-stick spray.
  2. Brown sausage in a large pan or skillet over medium-high heat until fully cooked through.
  3. In a large bowl, combine milk, eggs, maple syrup and mustard powder, and beat together until mixture is smooth and eggs are fully incorporated. Season with salt and pepper.
  4. Place chopped waffles, browned sausage and cheddar cheese in baking dish and toss together until combined.
  5. Pour egg mixture on top of waffles and gently press any uncovered waffle into the egg mixture.
  6. Place in oven and bake for 45 minutes, or until eggs are cooked through.
  7. Remove from oven and let cool 5-10 minutes before serving.
  8. Serve with maple syrup, if desired.
