Muddy buddies is a treat typically made with chex mix, that’s typically coated in a chocolate and/or peanut butter and powdered sugar mixture. This covers the chex mix completely and the warmed chocolate or peanut butter sets and forms sort of a shell around the crispy crackers…it’s so, addictively yummy!


Choosing to go with popcorn instead of chex mix leaves you with just as yummy of a treat, but one that’s got a salty twist. It’s the best thing to bring to parties – watch it get devoured immediately – and it’s a great, easy alternative to regular popcorn when you want to hunker down for a family movie night. Having quick and easy treats on hand is essential, especially during the holidays and times of year when you’re extra busy running around and getting stuff done; a complicated, time-consuming recipe isn’t what you need. Good thing this takes 15 minutes and then you can get munching!

Muddy Buddy Popcorn

15 minutes to prepare serves 6

Ingredients

  • 1 (2.75 oz.) bag popcorn, popped
  • 1 1/2 cups powdered sugar
  • 1/2 cup creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract

Preparation

  1. Place popcorn in a large bowl and pour powdered sugar into a gallon-sized, resealable plastic bag.
  2. In a microwave-safe bowl, combine peanut butter and chocolate chips and microwave in 30-second increments, stirring in between, until mixture is melted and smooth, then stir in vanilla extract.
  3. Pour chocolate peanut butter mixture over popcorn and gentle toss until popcorn is thoroughly coated, then transfer popcorn to plastic bag.
  4. Seal bag completely, then shake bag until all popcorn is coated in powdered sugar.
